One of my all time favorite treats to make is homemade Granola. It is simply delicious in a bowl with milk, over plain yogurt with sliced strawberries and also yummy over a scoop of vanilla ice cream.

When I make it for my family I double the recipe because it does not stand a chance at lasting very long with a family of five.

I found the recipe online a few years ago and first made it for a baby shower. The recipe got rave reviews and I have been making it ever since.

It is incredibly easy to make and only requires a few ingredients. Of course you can add plenty of other ingredients but the base recipe is really yummy on its own.

Vanilla Almond Granola

2 and 1/2 cups old-fashioned rolled oats

3/4 cup slivered or sliced almonds*

1/2 teaspoon ground cinnamon

pinch salt (about 1/8 teaspoon)

1/2 cup pure maple syrup

1/4 cup melted coconut oil

1/4 teaspoon almond extract

1 Tablespoon pure vanilla extract (yes, Tablespoon)

Instructions

Preheat oven to 300. Line baking pans with parchment paper.

Toss all ingredients in a large bowl and mix until moistened.

Spread on prepared baking sheets and bake for 45-50 minutes. Stirring every 10-15 minutes.

Allow granola to cool completely before storing in air tight container.

Creamy Pumpkin Cold Foam

 

My daughter recently visited a coffee shop near us with friends and she brought back a yummy drink for me with this delicious pumpkin cold foam. Since frequenting this coffee shop would be frowned upon by my husband and our budget, I decided to figure out how to make this on our own.

Let’s level up your coffee!

Here’s the recipe :

1 c. Whipping Cream

1 T. Pumpkin Puree

3 T. Powder Sugar

1/2 tsp. Vanilla

Whipped together until thick and creamy! Enjoy on your next warm or cold drink.

I mean I love them so much that I make them every week. Join me on Saturday mornings to make soups together.

This week I will be making a Spicy Chili. I make 2 huge batches of soups to give myself a break for 1 or two days out of the week. This has allowed me to enjoy other things with my family. I do change it up by adding different sides like salads, breads and so on.

Here’s our Chili recipe that we love. Enjoy!!

Instructions:

2 lbs of Ground Beef- browned and grease drained.

4 cans of Beans drained

1 can Tomato Soup

2 cans Diced Tomatoes

1 can of Rotel - we like the Hot options!

2 Diced and Sautéed Serono Peppers

1, 32oz Beef Broth

Mix together. Put on low in crock pot for 8 hours.
